Summer Salads

Happy June, everyone!! As the summer season "officially" started this past weekend (always a great weekend for me, as it's my birthday as well!), it's time to move into meals that are lighter and more summery! This pretty salad consists of chic peas, cucumber, and any vegetable or cheese you'd like to add! Easy to make and it's delicious and filling as well! Enjoy!!


Spring Chic Pea Salad

Two 15 oz cans of chic peas (rinsed)

One large cucumber, diced

Two-thirds Bermuda onion, diced

One cup of grape tomatoes, halved

One-half cup of parsley (I added just a little less)

One-half cup of canned beets

One-quarter cup of fresh mint

Zest from one lemon

All the juice from that one lemon

Two tablespoons of extra virgin olive oil

Dash of black pepper and a dash of salt (to taste)

Toss all ingredients together in a large mixing bowl and enjoy!

Note: I topped this with rotisserie chicken and a little bit of honey mustard dressing for some added protein. You can also toss in some feta cheese or cubed American cheese as well. This can be refrigerated for up to five days, but mine only lasted three :)
