Greetings 2025! Although the year is about a week old, I have been spending a lot of time in the kitchen cooking and baking. One of my favorite things to use in my kitchen is my trusted crock pot! I made a delicious pot roast over the weekend, and I want to share it with you all here. It's one of the easiest recipies to make, and you can do as little or as much as you want in terms of veggies and seasonings. I can't think of anything more perfect (well, maybe I can, but that's for another post!) than this lovely wintertime comfort meal. Let me know if you make it! Bon Appetit!
Easy (very!) Crock Pot Pot Roast
3 pounds of chuck roast
one bag of round golden potatoes
2 large carrots
one container of mushrooms (any variety)
one white onion, finely chopped
one bottle of red wine or red cooking wine (I prefer the cooking wine)
half cup of Worcestershire sauce
salt and pepper to taste
Coat the crock pot lightly with butter. Braise the chuck roast in a frying pan, approximately six minutes on each side. This adds flavor, but it is not a necessary step. I have done it both ways, and prefer the braising.
Wash and cut up veggies. I add about half the veggies in the bottom of the crock pot and then put the chuck roast on top.
Pour in the red wine, and Worcestershire sauce over the meat.
Add the remainder of the veggies to the top of the meat.
Season with salt and pepper.
Cover crock pot and set on low for eight hours.
