After a dreadful rainy Independence Day, we finally have summer weather here in New England! The one upside to all this rain, is that everything is lush, green, and beautiful. So now that it's summer (again), time for another summer salad, and this one could not be simpler to make. I made one box of angel hair pasta, and just added all my favorites--miniature cucumbers, cherry and heirloom tomatoes, and mini sweet peppers. Sprinkle with a little salt, pepper, and Italian seasoning, and it's easy and delicious. You can also add your salad dressing of choice (mine right now is Marie's cole slaw--wonderful). You can also add some protein with sliced chicken or beef, and dig right in!
